I went to Iceland and I got an Icelandic whiskey , which is malted for forty eight hour s over sheep dung . Sheep dung. Sheep dung. No, Pete , sheep dung. And you bought that. And I bought it. Well, what 's the sheep dung? Like why does that make any difference? It gives it a smoky taste. I have one of these sours. All right, we've got whiskey sour here as our welcome drink. They've got a little cherry garnish for those that are listening who can't see. It's a whisky sour. Now, ingredients of a whisky sour, whisky, of course . You okay? It's got a kick to it. Yeah. It's whiskey.is Whk y's a big drink said . I thought it was quite a bold move, you bring back whisky. Really? Yeah, yeah, whiskey's like, oh, I'm getting dung. He stung in. You weren't dumb when you went past it when you paid for this . You got whiskey, whiskey sour, whiskey, lemon , a bit of sugar syrup, and then you've got egg white. Now , I have a little , I wouldn't say life hack a cocktail hack for you. Yeah, for vegans, vegetarians, and sometimes even just if you're not veggie, sometimes egg white can have a bit of a weird taste to it. So I quite like something called I think it's called Ms. Better's miraculous bitters. And it's basically a few drops in that and it's a foaming agent. So if you want to use that instead of egg white, you can make vegan replacement ones. Oh, so you've got like a vegan friend coming around. Get out, that was it called Magic World. Yeah, Mesbetter s, and it's like a little foaming agent that you drop into the mix and you shake it. And what they say is do you know the difference between a wet shake and a dry shake? No. Oh, but let me tell you, sometimes a dry shake is no ice. You don't shake it with ice and a wet shake, you shake with ice put this in . And also what I will say is very good for espresso martinis if you want to get that nice foam on top. Oh cheese . I do know about my cocktails. I like it because I don't cook really, but I care about cocktails. So do another shot? Well, I'm not tasting the whiskey like the smokiness as much only because obviously it's in a whisky sour. So I've got some shot glasses here. I never normally buy whisky at Duty Free . So I went to Iceland. This is the fifth time I've been. All I went up there was to see the Northern Lsight. You know I've seen the Northern Lights? No, where I used to work in Lapland, didn't I? So they like because five times have been up there and I've got a look at the photos. I'm in this car park with all these people four AM at night looking around. It looked like we were dogging . Well, we used to have guests because for anyone who doesn't know I used to work in Laplanders . No, I was a tour guide to the search for Santa as an elf for three days, but decided it wasn't for me. So I used to survive you were a cute little elf. Thank you . But I hated it because they weren't treated great. The coach guides, that's a lot. I don't ske us Flocky hell . I'm flocked, flock it out . Oh shit. No, don't jingle on just now. I have a little taste of this. So this is so it's got a oh , okay . Oh, I tell you what, wow . Oh, that is failing . It's a single malt whisky this one . 'Cause you could add that over ice. Nice. Grained to glass in Iceland. No, I've seen it loads and I, used to get , oh this I know sounds bad. I've seen the Northern Lights probably like thirty, forty times. Are you sure it was the Northern Lights? Could you remember that stupid? No, that man, he thought he saw the Northern Lights, but it was the glow from the Premier Inn . Did you see that? Please get a good night's sleep. The glow of the purple from the big sign. Oh my god. Yeah, he's like, Oh my god, I've seen them in Leicester. It was a premier in. Well, we used to have people come to Finland and then go to me the guess. Will the Northern Lights be on? I'm like, We don't turn them on like you just have it's really hard to see. And you know what was really nice? Are they disappointing? Be honest. Are they over ? They're amazing. Green is the most common, but the best is when they're like ready pink . And what happens is, I think Aurora Borealis, if I remember rightly means it something like d ancing and when the lights are moving because sometimes it's just green but when they're moving you actually look up and it is like they're dancing in this amazing experience and you know once as a coach guide , they came out quite late and I drove round to all my guests who were staying in cabins and I knocked on their doors and I said, I'm so sorry to wake you up at midnight. I was like, But the Northern Lights are out and they all came out. Oh, you are a good talk. I feel like I'm gonna burst into tears. I've got emotional. I do get emotional . Why are you crying? Some people were like, Oh, it's just always what's wrong with me It's so whisky. People like Oh I've always, wanted to see it. I like doing nice. You're sorry. You're whisky. You're crying at yourself doing something nice . I know I don't know you in shock . Yeah , yeah. I'm trying to pull all this podcast back from being a weep test . You know what? So I went up to Scotland and I saw a load of castles and there's one, you know, I love a ghost story. One of the castles they, took the villagers , is it haunted? It tends to be affordable , but has enough character that guests won't feel short changed . Fresh and zingy with a bit of personality . I like it. It's nice expensive. I know it's affordable, but just tastes expensive . Okay , so Oh yeah, oh that's very drinkable as well. Yeah, yeah. That's what you want with a wedding. You just want to lie. It goes down easily. It's all fine. That is usually priced. I'll just say this in supermarkets , seven to twelve pounds. So the top end, this is a beronia one and that's at the top end at twelve pound a bottle . So how many bottles are you thinking for a wedding of one hundred and fifty people? You're thinking about seventy eighty bottles, really, aren't you? People only have like half a bottle of wine at a wedding . God you need a big drink at a wedding. They're so boring . And that bit in the middle, watch that bit in the middle. I just end up drinking for you know the bit in the middle the boring bit in the middle. What's the bit in the middle of the vows? No . , don't know that bit where the dog is on it . And then you'll tell you where they get town. Yeah, and they go and get their photographs , don't they? They do the whole photo shoot . It's aromatic and it goes well with a variety of wedding foods. Now for those watching, if you just have a look at these two glasses here, as you can see on this one with the Vide o, little bit more oaky, isn't it in color? Like you can tell, this is going to be light . This is gonna be we did the taste at the texture test, didn't we? So this goes well with a variety of wedding foods, salad, chicken, seafood. It's from New Zealand, nice and punchy with crisp c,itrus and fresh herbs or as the Americans would say herbs. I love how they say herb. They go herbs, don't they? You got any herbs with that? Some herb ? No herby? No, never, never. Not important . The go to wedding white for putting a spring in every guest's step. I think this is overpowering . I knew you wouldn't like this 'cause you don't like you're more okay. It's too floral. You're like an oak . This would split the room. Where ? This is people say, get a divorce . You see up, this is where I'm differing with you because I think that is guaranteed you're safe. Now it's weird, isn't it? No, don't I would say that. I don't like it. So this Sovibe is a common saying Sovibee? I love I love saying it. I actually don't baby. I don't love ay h beobeb but that's actually quite nice. That's eight to the fifteen pound range Catherine . That's a good thing about weddings as well you do go and do a bit of a taste test yourself, don't you? Yes, yeah. And have like you see what food you want, you fly out there, if it's abroad or you go up there and you go, right, this is what we're doing. It is a lot of money there to get people abroad, though. Can you see you ever getting married? You're in like a loving relationship? Do we see ? I don't know. Like I always use I do love a party . Yeah. I quite like to have like a marriage in like a big English country . Maybe at your castle if you ever find one. Yes. I could get married out. Give you a good rate . I will. Double the prize. You can hear the pit of pattern of tiny little legs and feet as you run out of as I walk up the aisle . I'm just going to the insules are so predictable now. I know them before you say . Right. Tell us about this. What is it? Pinot Grugio. Now I don't think you can go wrong with a pinog io as far as I'm concerned, Catherine No, it's not. Oh it,'s' nsice nice. It . It's nice. It's just a relief from that one. That's so flawless. Well, actually you've got three different kind of levels of colour here. So you got the first one, the vedeo, which quite oaky in terms of the color there . On the other end, the Sauvignon Blanc very, pale , almost kind of you've got a bit in the middle I'd say that's a little bit more . Yeah, here we go. Pinot Grisho, it's safe. It's crowd friendly, white wine that almost everyone enjoys, light, refreshing and pairs beautifully with light as summer wedding menus. Classic bottles from regions like Venito or Frioli are typically dried with gentle fruit and clean acidity priced around the seven to twelve pound marb. Now before, I drink this, yeah, can you remember when she said if it's acidic, what do you get? You get that kind of ting yeah yeah are you getting that 's have a taste . That's it for me. I don't even need to carry on. That pinot grucio perfect, I would say. For me, it's that one. Oh really nice. I feel that one feels a bit special, a bit more special than that. That is no . But the thing is, Alan, I will say this , it's a wedding and it has to be safe . That's what I'm saying with the dilemma. This one, the Video is nice, but I don't know if it would be everyone 's taste if they don't love the oakiness of it, whereas you've got the nice kind of and also it's around the nine pound mark. All right then . So if you are buying a few bottles , all right then,. So that's the best one, right? Pinot Grigio, yeah. But it's saying here for a good rule of thumb is to plan on about half a bottle of wine per guest during the meal. Okay. This usually means that people will enjoy two to three glasses each while eating. For one hundred fifty and guests that work s out roughly seventy five bottles of wine . But if you're I love our producers, but if you're inviting me and Alan, then that should just about cover us. So you may want a few more. dare you ruse ruse . So I think basically , if you want to go a little bit bougie , go for maybe the Video, but I think the safe option is the Pinot Grishio. Yeah , I concur and of course always drink responsibly. I think I actually drew the short card with my name because everyone's always like, that's a really glamorous name. How'd you spell it? How'd you say it, all this? And then when someone says, What does it mean? I'm like pig in Latin. It's Latin pig. No, not a pig. I'm like, thanks, Mum. Cheers, but yeah, pig you were born did she go she's a portion. She reminds me of a pig, bless her like rocking me. 'Cause you know Allen in Greek means handsome. Does it? Yeah . Well, there we go babe sweet. I mean in English . Listen, we have something in common already because I love cocktails and so many people, you know, this we've been focusing on wine, but we wanted to like slightly branch out and we're going a little bit further afield, not fully are we, but how did you get into cocktails? Now people have said to me, you're a mixologist. I'm not. I call myself a cocktail enthusiast. Are you the same? I agree. I fully and I think a mixologist is a big name and I think it is very I don't know, I think it's overused for the wrong people. Isn't it like you know, some people say chef or the safe home . This, this, this . And I think also it's like, well, I'm self titled home cocktail queen. Okay. Because I don't work behind a bar and I've been doing it for six years. Yeah . And I think a mixologist is like it's a skill, right? People have worked on it. It's like chemistry. It's chemistry. It's science, it's actual , it's wizardry babes. So I'm just like, if I hear that, I'm like squirm a little bit if I'm honest. Yeah, 'cause I'm just a bit like, that's a big title. And this podcast is all about being accessible and that's what I want where you can go or can make a nice cocktail You couldn't have been like, that's literally what I always say, like whenever I make my cocktail s at home because if I'm honest, I don't stand behind a professional bar often. It will be if I'm like doing master classes or whatever, but it's all about accessibility, relatability and just everyone being included. It's not about it's not about separation or anything like that. It's about everyone joining in. Whether it's with booze or not , everyone can be included. So what are we doing? So we've got cocktail. I'm told, is it with a bit of wine though? So we're still we've got a little bit of wine. We've got a Frisante wine, which actually I've recently learned is just a lightly fizzy wine . It's an Italian wine. It's really nice. Let me get out of the fridge. But also it's a fail safe wine that I use for cocktails. It's sweet, it's demisec, and it just, if you're gonna put it into a cocktail, it just sort of almost adds the sweetness instead of a syrup. And with this cocktail I'm going to make for you guys, I'm actually really excited to see your reaction. Yeah. Oh my god . But I don't know, I don't like it could flop. Like you guys not gonna flop. Well no, so basically it's I'm going to make it for you while we talk about it. It's a white brine spritz . A white brine brine . Now I know, I know, okay. No. That's all we got time for on bottoms. 'Cause everything I do is all at home all the, cocktail creation, it's all about what we can find in our kitchen cupboards, our fridge, freezer, whatever . And brine of olives, capers, pickles , it's everywhere. That's sort of savory. Do you hate the savory vibe? Oh, I love pickle. You're into a pickle . He's in a pickle. Yeah, it's not my favorite, but yeah, I'm going to give it a go because I'm sure you're the best. Well it's kind of sweet weirdly. It's like a I'm a little bit like I'm just yeah anyway I'm gonna so we've got some ginger going in this is a nice London dry. I think having a London dry is just nice and easy. It's like you know you can just pop it into a cocktail and it'll still you'll still get the undertone of a gin , but it still lets the cocktail do the talking. So how much of that are we doing? So we're doing forty mil of gin . Like I said, you don't want it to be like overpowering. No , sort of liquid salt with nice. I get asked to do these things where they say can you actually explain what that means? And then I'm like describing it in flavor and I'm just like it's working now do not worry, it's working. This is a piece, right? Ah, yes, is that like a burgamotty type liqueur is it? It's so good. It's an apparatif and it's literally with your blood orange margaritas, take out the quantre if you use it. Add a bit of that. Oh my days. This in a margarita is one of my favorites . Yeah. It's a triple sack quite I love it's a different flavor. This is more herbaceous, it's got bergmot, it's got like that sort of citrusy feel. And I think it just sort of brings back the flav or a little bit. You do the ice always last as late as possible. To avoid dilution. To avoid dilution because honestly yes , anything, ice is your best friend with a cocktail. It's the most important ingredient for a cocktail , but it can ruin a cocktail so quickly if it's not looked after, if you've got water, I can talk about ice? I can too. Big ice and also if the ice cubes are so small , they'll just dilute straight away Please, that's true. It's also easy. Honestly, clear ice faves. Clear ice clear ice. What? Tell you. Hello crazy. Hey you too crazy kids. What have you been talking about? Wild times over here. Where's my brine? Right. Get a whiff on that. Both of you . This is my Brian. Ooh . What do you thinking? I'm thinking great . This is a bit of me. I'm about anything pickled . Right. So have a sniffin there, Allen, see if that's helping your senses. Stop thinking about that. It's quite strong. Can you smell the bergamot in there? Yeah , yeah, is that the herb? That herbaceous feel a little bit of an orangey kind of yes. Is that with your London dry is gonna be literally just like pairing beautifully. And then we're going to add the brine fifteen mil and basically also because the demon get the brine from Baby Pickle Jar in the fridge. So this is nice, big eyes. too Big eyes. You know what I know is when people go they go, not loads of eyes. I don't want it diluting eyes. The more eyes, the less dilution you'll have. Babe, I can't when they say like, well no, I can't. And also with the ice, if it's like only half filled . And then you can see it melted and it's all like sad. No, I can't. I can sometimes tell by looking at it. Oh, babe, you can tell the minute you look at it, it is literally awful Five hours later chat please. Can I be included in this conversation? Right. So listen, what we're going to do next year is fill the glasses up and then you're going to swizzle, just technically stir, right? You're going to stir it. So basically we are going to dilute the spirits because we don't want them to be you're going to have a straw in a minute. I don't want you to have a massive mouthful of really strong spirit that's warm or you know it hasn't been diluted because we do want the ice to do its job. That will be topped up in a minute with more ice. The ice is really important, Alan. Yeah, I know it is. It is a surface area . Yeah, also this as well. So can you see like the little where you see the water coming out on the side that's just surface level ice like what you were just saying? And you do want that in the cocktail with this sort of cocktail in there. Right. Next up, we're gonna top up with our Demisk. Now how do you fill that screw tops? Well, I asked this. Did you? Yes on a previous episode and a lot of people have sent this in and they've said apparently it's fine, it's absolutely fine screw top and actually you're safer with a screw top because it might not cork. Right in here we're going to do eighty so a hundred mil again it's your pallet. I'm going to go with eighty to start because I think you can add if you wanted a little bit more . I'm topping up with a bit of soda water. Now this cocktail guys well, I say spritz, it's a spritz . It's one of those, which I genuinely think is going to be really coolable in the summer because it's actually, I mean it's got quite a bit of booze in it but it doesn't feel like it. It doesn't taste like it . I don't know. We'll see. I want to see your reactions anyway. Now what I will say about this is I think a garnish. Oh I've already got that. Oh my gosh. Jacob Garnish. Okay, so this rose is a pickled rose . How'd you make that? Is that a pickle? It is basically a little sliced pickles and then into an ice cube mold and bishbash bosh. Brilliant. You know what I mean? Also you can because I'm all about right. I can't stand garnishes that are wasted . Either incorporate it where you can eat it maybe or I didn't know, I just think there's so much waste around. I've never seen a pickle being used as garnish of you. No, but I love this because you know what? Before you put that in , it didn't even look like a cocktail necessarily. A garnish is it's like the icing on the cake yes it definitely is. I think it steals a deal and I think also it's like you can go I mean I'm all about like having a nice garnish that can be incorporated it can complement the cocktail all of this and I think garnishes can go a little bit crazy overboard. However, that's edible. It's only going to contribute to a cocktail and it looks bloody cute. Yeah And it's different as well. We live in a world now where people play safe food cocktails. This is different in this people are so intrigued by it. I mean, it's like it's I can't wait to sip it, can I? Yeah . So what do you call this? The picture? This is my white brine spritz.
