I think with sandwiches, crunch is key. So I'm going to elevate the crunch slightly from the fish finger, pardon my reach , with a crispy shallot, a pickled sorry, a pickled girkin? I love a girkin. Well, I'm putting a girkin on here like it's basically like a fish finger lasagna . What you're layering it? Yeah . No, it's dill sauce because I think the dill will really elevate it there. So I've got a couple of pickled shallots on there to add to the crunch of the bird's eye fish finger. So I'm gonna start you off with one of these and then I'm going to move you over to Rosa's that hopefully you'll like, but just so you can learn a little bit and venture out in time. First question, is a pale province like that essentially white , dressed up as Rose . Is it like a little is it like a gay white wine? Just for you to say not me let's get her cancelled So there are kind of three main ways that rose can be made. So the main way is called maceration . And that's when the juice of any grape is always clear and you get the color from the skin. Yes. I might have told you this , I think . So to get a rosea , you just leave the juice in contact with the skin for twelve hours to twenty four hours, depending on how deep you want it. That's maceration. Then we've got one called Sagn ier, which is a fancy French word for bleeding. And basically that's when they're making a red wine , but then they bleed off a little bit in order to keep that red wine to make that red wine more concentrated and then the stuff they' ve bed off than they can use as a rose . No. So like a remnant remnant. So that one's not always . That one's not always as good of a quality. Then you get binds. A bit like you've got like cuts of meat. You've got the back of the cut yet. Yeah. And you know, they wouldn't have even used it, but since the popularity of rose has become so big now it's like ah, two for one. Yeah, exactly a bog or so is that wet method maybe a little bit cheaper and a little bit .act Elyx . Yeah, because the thing with me and you're the same, sometimes when we go to a restaurant and order a drink or a bar or something, I won't ask what the price or where it's from. I'll say, Oh, can I have a look at the color of it ? Because I am driven by that but someone's in the naughty corner. So let's start ing that this one isn't Sagnia is No, this is a beautiful rose a winery that I absolutely love called Mirabo and I love them because it's nice. They do such amazing things when it comes to environmental causes and they're all involved in like regenerative bitter culture. And I always think, I know it's a little boring and a little whatever, but I just think we drink wine in such a place of happiness that it shouldn't the making of it shouldn't cause anyone's sadness . Do you know what I mean? Yes. That's actually I always want wine to have a what? The story or the wine I'd switched off to be honest . Yeah , I So this is delicious. How retailing do we know? It's sixteen pounds. Just clarifying here, the skin of this so the skin of the grape probably not that much contact. Exactly. And how long then are we sleeping for twelve hours? Maybe? That quick. Yeah, maybe twenty four at top just enough to pull some of the phenolic, so the colour and the flavours and a little bit of the texture, but keeping that fresh acidity that you know and love in a rose. Would you say there's like wine can be in fashion and stuff? Because obviously like the sun's come out, you see people there. I'm gagging for a rose. This is the time. Is there any is there trends at the minute with wine and rose? What's happening? You might be surprised actually that obviously rose in summer is a thing, but Christmas is the second biggest spike in rose consumption. Everyone is drinking rose at Christmas now. I don't have Christmas ever. Because honestly, rose is the best like if you don't know what to pair with food wine. If you've got no idea, go for a rose, you really safe. it Be'causes got like a little bit of the structure and fruit of a red, but the acidity and freshness of white, it works with so much know what I'm thinking about it now . And if I was eating and I didn't want a red , but sometimes I don't want to what I suppose that is a bit Rose is a bit of a meat in the middle, isn't it? But are there any supermarkets or anything at the minute? You know, it's summer season, where would you head to get your wine? Is that where would you get the best bargain song? Because we all like a bit of like a bargain bargains you know what? I love the discounters are doing great things. Audi and Little do good things. You have to kind of be a little bit savvy and know what to look for . But they're always really good and I do love a waitrose. I think they're always consistently good. What about Tesco wines? Are they good? Tesco They're such a like monster. They have so much power can. br Theying in so many good bargains because just because of economies of scale. They are excellent . Actually we do we do tastings every autumn winter and spring and summer. And Tesco's is always the biggest. So we're tasting like one hundred fif andty wines in one go . Wow. And that's like not even their whole catalogue, yeah. So this is late , but we knew we'd be like , I just knew this isn't the thing, but this is the thing about colour. We know you're at a restaurant like you've said this but you're at a restaurant . He shows me this . He shows me a mirror bow and he shows me a chapel down which is slightly darker . So I wanted to show you like a cool French cousin. That is how I feel about Corsica Rose. I love Corsica Rose . You know, they've got a very mixed history. They've got a bit of French, a bit Italian, they're in an island . The grapes they use represent just the vibe I feel about the island, which is like a little bit spicy, a little bit saucy. And I wanted to show you because I don't think you would have chosen this colour which is no way it's darker than don't like the label, don't like the colour. Don't like that thing on the bottle . That's the indigenous grape. And cirrah is also known for like red fruits and black pepper . So I just think this is what you do think ? It's not too fruity. That's so nice. The spiciness . But I think a lot of the time what people want in a Provence or what they're looking for, that they love in a Provence is like the freshness , right? It's the acidity. And I do think even though this has got a little bit more texture, a little bit more flavor and spice, it still does have that acidity coming through. Do you know what? I don't like it. Fair enough. What I don't like is and I think you taught us this about the lightness and the texture in your mouth. It's slightly heavier than the pale. Yes. So you don't have to think about it. You just have to drink it. And I like those too, but sometimes you want they were eating . I was gonna say with a meal, this might be a little bit nicer . It's very unknown. I would say in the wine trade , yes, people love it, but it's very unknown. But this is very typical for a Corsican rose. I is one of my absolute go tos. When people write dilemmas in, a lot of people want to bring a wine to a party that maybe is a little bit left filled. So that would be great because people are like, this is a Corscan one that I love. You'd be like, that wow. So how much is this then? Eight pound fifty Oh , I know . If I saw a bottle of wine for eight pound fifty, that might put me off. I know that's it . So you're feeling the fruitiness. There should be some acidity there. This is nice. And Joan, you're being so good. I like it. And Joan, I saw the I saw the colour and I saw English, Rose, Ken and I thought, please be nice, please be nice. Because you know, we are to be patron diarrhea like come on, you know, and I would have that. I would have that. That's such a good choice. Would you? I like it. I really do. I do think it is on the cusp. I will say percent is the fruitiest that we've had on the fruit. On the cusp for me and it's just there, but yeah, really nice. I do love Chapelown as a brand that I always loved there. I'm so glad again, when we're talking about food , this one again will take it up a notch and we'll be able to go with like even barbecued. You've got to remember we've got less land in England . It costs more for labor. So that's why English wines always tend to be a bit better.
