Episode 8 | Grinding for single serve — Jun 12, 2020 — starts at 0:00
Good morning everybody . My name is Alexandro Brambati, sales manager in Ima Coffee Petronci . Welcome to this webinar and we'll see today how the grinding and processing technology can affect the typical coffee specific ation of a single serve . Independently from the coffee markets and product on formations, it is true that two of the key factors that move the consumers to buy are primarily how attractive looks the packaging and second arily how easy to make a coffee at home . These two concepts their extremization in the single serve market . In fact, pods, capsules, and pets has become to date a global sales driver from the major coffee companies and a must to have products for the consumers and families . It is understandable that the grinding is becoming a key factor for the application in the world of single serve . In fact, in a very tiny volume, it is contained very few grams of product that can be from five to fourteen grams typically . And you can easily understand there is no margin of error , so your product must be well grounded and consistent over time into the capsule . As you know, in fact, in a single coffee production line for packaging, you can produce even million and in some particular case even billions of capsule . So you can understand easily how much is it important to have a consistent product, a consistent capsule over time to get used your customer to drink all the time the same coffee. Let's talk a little bit about the grinding technology and specifically for single serve market . As you probably know, the single serve market in the world is very different from region to region, from habits to habits in order to how people are used to drink their coff ee . Simply think about Europe and North America . The difference are huge. In Europe , the most common capsule that you can find almost everywhere is an espresso compatible that has some specific technologies, specific extraction method that are really linked to the espresso quality of coffee . In North America instead , the big majority of the market is taken by Kup compatibles that are cap sules single serve that can replicate the filter coffee machine brewing . It is easy to understand that the difference in the product are huge . But let's see a little bit how you can do a very good grinding for an espresso and for kup with different technologies or even with the same machine . We saw that the two technologies available for grinding are by one side the blade or stone grinders , by the other side, roller mill grinding. For sure the blade grinder is the easiest way to grind the coffee basically two rotating blades , crush the coffee and produce the powder . And for sure it is the most widespread technology used all over the world in the coffee shops and in the coffee factories to grind the coffee . But if we look a little bit more into the quality , into the freshness and into the cons istency of the product , we will see that the evolution of this concept with blade is the roller style grinder. Roller style grinder is particularly fit for capsules , either way if we talk of Kup or an espresso or doce gusto or whatever kind of capsule because it is adjustable , setable , and we can crash the coffee into two or three different stages controlling the gap of the rolls and controlling the result of the powders out of the coffee. One other important that we have to take in account when we look at the capsule normalization or densification process . Let me say this is important fifty percent and the other fifty percent is the grinding to obtain a consistent product and a product of quality . In fact , once we have produced the coffee powder ground and typically for let's talk about espresso compatible , we need a B modular grinding made by fines and coarse particles . Now we have to mix together into a densific ation system . Densification system is applied mainly or exclusively on roller style grinders because with this technology , you can extract the consistent coffee produced by the rolls and you can mix the coarse and the fine together , also having the effect to mix the chaff . Because one of the problems of grinding is that sometimes remain chaff that are very critical to be grind . But with identification we can avoid this problem . Densification is also useful to guarantee the same compact ness the coffee if we look at an espresso compatible in the same way . Espresso technology works by the fine and coarse mix of powders but, also with the compaction of them . Having a good densific ation means to have a reliable product over m illion and million of capsule produced . One more the extraction dur ation and before with the grinding , if it is gentle , if it is done with the right machine , can ensure to avoid the aroma loss , can ensure to overheat the coffee and it is very, very important into a tiny volume like in a capsule. Let's see a little bit which are the difference between espresso and Kau. As you probably understood the espresso they are more difficult to produce in terms of grinding and the Kup are a little bit easier, not that much, but a little bit . K are an average distribution of eight hundred and fifty mic . Instead, espresso has a distribution on average and the particle size of three hundred, three hundred and twenty according to the coffee up to three hundred and fifty maximum micros . I would like to close this webinar with a consideration . The market of the single serve has grown so much in the last and is expected to grow even more in the next and coming years . As we saw in this webinar , there are many different capsules, single serve technology , geometry of the capsule itself and many variety of coffee inside the capsule that we call for simplicity blends of coffee coffee . This has led to an incredible variety of coffee grind size . And you can imagine difficult it is to guarantee a perfect process for every product in the world . So only if you have a good process , a good machinery to produce the grind coffee , a good device for the gazing , you can be sure to succeed on the market that is becoming more and more competitive day by day . One of the best suggestions that I feel to give you is to ask to a process specialist in order to guarantee your production of coffee will be effective and responding to the market demand . With this word, I would like to say thank you for this watching and we'll see in the next webinar in this channel . See you soon
